Why can I connect my headset and speaker via my Nexus 4, but when I want to connect the same devices to my iPad (4th Generation), iPhone 4S and iPhone 5, it requires a PIN in which is non existent with the devices.

The passkey should be in the documentation for the devices:
Bluetooth headset: Refer to the documentation for the headset to determine the passkey.
