migrate from windows server 2003 to mac server lion

Last year we introduced a 100% mac users at my office.

Unfortunately we had to keep an old windows server 2003 on line since we still had some usage for it.

Everything was done except that apparently the internet connection still goes throug that server.

How do I migrate that from the windows machine to the mac mini server?

Your question is confusing because a server box is not really needed for a simple Internet connection. If your Windows server is truly only acting to physically connect Macs to the Internet you can replace it with a router. If, on the other hand, your Windows server is hosting a user directory and network services like DNS and DHCP then you may need a Mac server to host those services.
