Read the section here about restoring from an itunes backup http://support.apple.com/kb/HT1766
Note that all data created on your device since the backup was made will be lost
Try this way to recover iPad notes:
1. Connect your iPad to your computer.
2. Open iTunes.
3. Under “Devices”, you should see your phone, right click on it.
4. Click on “Restore from Backup”.
5. Select one of the earlier backups when you had all the notes and let it install them. You are done!
