If Apple restricts syncing iPhone with Entourage, why doesn't she introduce Entourage's great properties (like linking accross, categorization, project dealing) in Address Book, iCal, text files and so forth?

Entourage is a (now discontinued, I believe) Microsoft product, not an Apple product. As to why Apple choses, not to emulate the features of a now defunct program, they haven'st said. You can submit feedback to them requesting such features here:
In the meantime, there are hundreds of contact management programs, calendar apps and project managment apps available in the App Store. Perhaps one or more of them would meet your needs.
