When I have my iphone turned off, will I receive my imessages as a text message when I turn it back on? Or will they they be an imessage?

No. Off on an iPhone is off, nothing works.
Depends on how long your phone is turned off & whether you are connected to WiFi or 3G. iMessages are only stored on Apple's servers for 24hrs. If the sender tries to send you an iMessage, & your phone is off, it will most likely go as an SMS. Carriers only keep messages for deliver for a limited time, then delete them.
