Whenever I create a new note in the Notes app, it some time later shows up as an email in my Outlook (2007) Inbox. I don't tap the "send-to" button at the bottom of the new note, it just happens on its own. I do have my email account listed in the Note app settings: "Default Account" field.
Does anyone know why this happens?

Your Exchange server is handling your Notes as a kind of dummy email message. So just like your email software looking on your email server to see what's in your inbox, the Notes app is looking at your email server to see what Notes you have.

I wonder, though, what else might be causing Notes to send emails as I am not using an Exchange server, just Outlook on a PC.

You probably have your email account set up with an IMAP connection to your mail server and have Notes syncing turned on. To turn syncing off, on your iPad go to Settings -> Mail, Contacts, Calendars. Under Accounts you will see your email account. Select it. On the next screen, turn Notes Off.
This should prevent the Notes app on your iPad to sync with your mail server, which should keep it from showing up in Outlook.

this is the new notes.. with the old iOS the notes useed to sync with outlook notes, now that we have had to create a new icloud email that is where the notes go to your icloud email address which was automaticly added to outlook when itunes synced with your phone after the update to iOS7
