I sent and imessage but got an email back... I thought I had all my setting correct.

Either you mistakenly sent an email message, or the recipient decided to reply to you via email, rather than iMessage.
How would i send a email message by mistake as I selected the mobile number and it said iMessage.....

In that case, it seems you didn't mistakenly send an email.
I guess the recipient just decided to reply by email instead. Have you asked them?
I did ask them but I didtn get a response from them....
I looked at my settings.... under 'Start new conversations from' - I noticed my mobile nubmer is not present under that heading. Is that right?
