One Sheet?
What options do I have to use in order to get just one sheet to work with? Every time I create a new spreadsheet it gives me 4 pages. I just want one.

My guess would be that you have Print View turned on.
View menu > Hide Print View.

I know that when "Print View" is on you can see the four pages on the screen. But when it is off and I print the page I get 4 (3 blank) pages.

Is this a Mac OS X question or an iThing iOS question? What version of Numbers are you using? '08 or '09?

There must be content in the bottom-right area of the sheet. select the menu item "Edit > Select All" to see ALL objects on the sheet

Unlike Excel, every cell on a Numbers Sheet will Print, even if it is blank. That's why you get what you think are blank pages. There is something there, or the page wouldn't print, but that something may be a blank cell, row or column.
Delete the table parts that you don't want to have printed.

Just never enlarged my window enuf to show the bottom right, so that I could change the size of the sheet.
