Just because you haven't run into the issues, doesn't mean they don't exist. I have seen the issues personally during testing.

I currently have it waiting for me to install. It is hogging around 2 GB of space. I don't plan on updating due to the fact I'll be changing carriers and phones in about a month. I want to keep the iphone as a "iPod Touch" type pf thing and not upgrade.

Not trying to fool anyone.
Apple has never provided a method of downgrading the iOS. That doesn't mean it's impossible. It's just not a very smart idea, and could cause issues, if not immediately, in the future.
