Q: How to remove category from songs in iTunes 11.1?

There is no category for songs.

Do you mean Genre?

i have the same question this is how it looks i loved the older versions of itunes were so easy to use this is so complicated and few glitches.

im having the same issue help me if you figure something out. i like it so neat, the arrangement of the lyrical info.

What do you want to do?

You can hide that column by right clicking the header and deselecting Category. later iTunes versions you can't seem to get to Category as it isn't listed in Get Info. Perhaps a metadata editor would do the trick if you wanted to delete that information as well as hide it.
