Like you, I had every purchase hidden on my computer, but everything was showing up on my phone when I synced it—regardless of whether I wanted it to.
In iOS 7, the path you need to follow is Settings >> Music. From there, there will be an option that says "Show All Music." My guess is that yours, like mine, will be green, meaning that all music (including stuff in the cloud) will be shown. Flip that to the left, turning it off, which means that "Only music that has been downloaded to [your] device will be shown," as stated by the function's description.
Then, if you go back into your music, it should have cleared the iCloud songs that were undesirably showing up.

Sep 24, 2013 10:42 PM in response to jonny_two_shoesby mrchezem,I had the same issue. I hid shows on iTunes but they still showed up on the iPhone and iPad. Here's how I solved it: On the iPhone/iPad, go to Settings > iTunes & App Store. Try turning off iTunes Match if you use that and then sign out by tapping your Apple ID. Finally, reboot the iPhone or iPad and the hidden shows should no longer show up.

Sep 26, 2013 11:20 AM in response to jonny_two_shoesby GoOranje,The tracks that still show have been downloaded to your phone. I solved this by clearing the music off my iPhone. This will remove the tracks you want and also the tracks you do not want. You will need to manually add those tracks back to your iPhone.
Unfortunately I haven't figured out a way to keep tracks I've hidden off my iPhone and still play the tracks I do want access to. The only other option I know is subscribing to iTunes Match at $24.99 per year in order to delete content I no longer want... and I will not be paying Apple money for that privilege.
Its maddening, undesireable, and iTunes will remain unuseable until hidden purchases are hidden across each idevice.

Sep 26, 2013 11:49 AM in response to GoOranjeby GoOranje,You'll need to go to settings > general > usage > music and swipe to delete all music from your iPhone. After that it should no longer show up when "show all" is turned off. You can then add back the music you want.
