If I have two appointments at the same time, they overlap in the iOS 7 calendar rather than appearing side-by-side in the daily view, so that I can' read both of them due to the same background color. Is there a way to change this via a settings change?

I'm not able to replicate that at all. You might try a reset: Simultaneously hold down the Home and On buttons until the device shuts down. Ignore the off slider if it appears. Once shut down is complete, if it doesn't restart on it own, turn the device back on using the On button. In some cases it also helps to double click the Home button and close all apps BEFORE doing the reset.

I am also having this problem, mainly on my ipad. Having a business, we make many appointments on the ipad, but when there is so thing that overlaps it covers up other appointments. Very annoying. Yes I could just select an area where there in no appointment and it is temporarily fixed, but that isn't enough. Also if I have a 3 day conference while my wife has multiple appointments we can't see the individual appointments only the3 day long conference!
