how do i log out of my apple ID on my iPhone 5?

Go to Settings > iTunes & App Store > click on the Apple ID and log out.

You don't "log out of your Apple ID" - that's like saying "how do I log out of my username".

The Apple ID is used to sign in to many different places, each of which would take its own logout. Examples:

• iTunes Store
• iCloud
• Game Center
• iMessage
• Apple Store

The email associated with iCLOUD on my phone is wrong and I can't figure out how to change it. How do I change it on my phone to be the correct one?

If you're talking about the original owner's credentials, you won't be able to change it.
