I have the same problem. After calibration I use the level. On the same surface with the home button (phone is on the standing on the long edge) on the left I get a +4 degrees. I orient the phone with the home button to the right it displays -2. With my iPhone 5 it displays perfectly level. Wierd.
My Silver 5S is around 6 degrees off on the level. Checked against another Gold 5S and a bunch of 4S's.
My level is also off ~ 5˚. Think this is a hardware issue with this model. Have other 5s you've checked against been off, too?
Yes, mine is off by 5-6 degrees, and always in the same direction. Since there's apparently no calibration involved, this must have to do with how the accelerometer is mounted. That's a bit troubling since it could be expected to impact apps (gaming, etc.) that take advantage of the accelerometer.

This is an issue that affect most of the 5S's Apple has been contacted. There is a 13 page thread over at macrumors if you want to get more details on whats been done etc.
I contacted support today and they have said they will get back to me in a few days.
I think this is a hardware issue and can't be fixed.
It appears to be really widespread and only a recall will fix it but apple will never recall these.

Busted out my handy old 'Stanley Level' app. It uses a different calibration process. It works fine. If this is true for others with this problem, it would -- to my mind -- tend to indicate this can be fixed with a software update.
My compass is off by about 12 degrees after performing a calibration. The compass also seems to easily get interference. It is quite often off by random amounts. In one instance it was off by 180 degrees.
The level is off by 4 degrees when the 5S is placed on a known level surface. An iPhone 4S placed on the same surface read zero degrees.

I updated 2 iPhone 5s's to iOS 7.0.3. One level is perfect in all orientations (flat, side and top). The other is perfect in landscape, but off by 1 degree when flat or in portrait. I'm leaning toward saying close enough. Anyone else seeing this issue since updating?
Now, whenever I start up the Compas app, I have to recalibrate. Once I've recalibrated it works OK--off by -1 degree. But I need to do this whenever I restart the app--so what exactly has been fixed? Seems to me it's the app, not the underlying problem.
Has anyone experimented with a game--like a driving game--that was messed up by the poorly calibrated sensors? So far I'm not convinced that this problem has been solved, despite what the bloggers are saying.
