How to enable/disable AFP logging?

I remember that older versions of OS X Server had the possibility to check several logging options for AFP. These could be enabled and disabled using Server Admin. Now that SA is gone I see no such options in Server.app. The problem is that we have several servers. Some were 10.6 and have been upgraded in the meantime to 10.8. Others are new and came with 10.8 preinstalled. The older servers had all logging options checked while at 10.6. Looking at their AFP access logs shows a large amount of entries. The new servers do not show this deep level of logging.


I would like to disable the excessive logging of the older servers and maybe add a few more logging options to the newer servers. But with SA gone I wouldn’t know where to start looking. Terminal work is absolutely fine so maybe someone can point me in the right direction?!
