You most likely have a profile that was installed on your phone when setting up the Exchange account, It's typical to restrict this setting...they're protecting their data, and the only thing you can do is delete the Exchange account & then remove the profile to get that setting back. Either that, or take a case of beer & a pizza to your IT dept.
Btw if you have Low Power mode on disable it in
Settings > Battery > Low Power Mode
This will allow you to change the AutoLock again if its gray and Un-Responsive

My settings>General>Auto-Lock only gives me 1 to 5 minutes as options. Perhaps that's because I have a passcode but I can't seem to figure out how to turn off the passcode option. Is the passcode preventing me from turning off the screen saver?
Settings>General>Auto-Lock>Never....you'll be measuring your battery life in minutes unless connected to power.
Do you have an Exchange account on your phone?
Thanks for the info. unfortunately, an exchange account. Does that mean I can't turn off the passcode/screensaver without some sort of major effort?
I go to Settings/General/ but do not Auto Lock in the list of options. Have an iPh 6S running ios10.3
