How to See .zip Files in All My Files in Finder
Is there any way to tell All My Files to include .zip files?

Click on All My Files / Then click the Action Button/Show Search Criteria
See my screenshot below. If File extension is not a choice, then choose Other. In the Attributes select File Extension then .zip. Click Save and if you check "Save to Sidebar" you have then created a smart folder for .zip files.

Do I then save this as a Saved Search?
Just to confirm, there's no way to make the inclusion of .zip files in All My Files as part of the "default" view, right? This is done via a Saved Search, correct?

Maybe I don't understand the question. When you save the file, you'll be asked to name the Folder and if you want to save it to the Sidebar. If you save it to the Sidebar as shown in the second screenshot, it creates a Smart Folder, which I named zip. So Save As: zip. Whenever you want to find a zip file on your System, just look in Smart Folder in the Finder Sidebar

Hopefully that does what you want. Although it does not create a default view in All My Files, it does create a default view in the Smart Folder.
