Try the steps suggested in the following article to delete any content you may have downloaded onto your phone:
http://support.apple.com/kb/HT5772
You should also make sure that either the "Sync Music" section of iTunes is unchecked, or that all music syncing options are unchecked when syncing with iTunes. Thanks for using the Apple Support Communities. Have a good one!

Apr 15, 2014 1:52 PM in response to braden85by Alexwjoker,I have this problem too, but my music that is stuck on my iPhone 5 is not downloaded from any store it was burnt via cd on to itunes and then synced up to my iphone 5. It is not stored on the cloud.
I sycned up the music from itunes to my iphone, but now when I have unticked the music I do not want and sync again these five albums remain on my iphone. If I untick Sync Music in itunes so there is no music on my iphone for it to syncthe albums still remain on my iphone. iTunes is not recognising the fact I synced music to my phone and now wnat it to unsync the music.
Any help or reason why it is doing this would be appreciated.
