In order to change your Apple ID or password for your iCloud account on your iOS device, you need to delete the account from your iOS device first, then add it back using your updated details. (Settings > iCloud, scroll down and hit "Delete Account")
Providing you are simply updating your existing details and not changing to another account, when you delete your account, all the data that is synced with iCloud will also be deleted from the device (but not from iCloud), but will be synced back to your device when you login again.

I wrote down the worng Apple ID for the iCloud when I initally set my iphone up and now I can't remove it and have no password for it. When I try and delete the account it says I need to put in the password for it first... don't know it because, again, it's the wrong apple id... I left out a letter :/... any solutions?

Sep 30, 2013 4:11 PM in response to Winston Churchillby 6thm00n,Issue was resolved spontaneously after being on the phone with apple support for about an hour... Basically no one knew the answer becuase deleting wasn't an option without a password... and yet I tried for the 50th time and somehow it let me delete the account without a password which is a bit of a security issue FYI... apple had created this backup email for me, which isn't connected to me... they were not able to explain that either... weird all around, yet resolved. I'm happy.
