AirPrint only works when your iPad and the printer are on the same WiFi network. Unless your office printer supports printing over the Internet, as some HP printers do (https://h30495.www3.hp.com/c/46359/US/en/) or you use some sort of cloud-based document sharing such as Dropbox, then you'll have to email the document to your assistant.
