I assume you are wanting to know how to make sure that your account is disassociated from your old phone (rather than your phone number).
If you no longer have your phone, go to iCloud.com and launch "find my phone", select your device (if it is in the list) and choose "erase". Once the erase is complete, choose the option to "remove from account".

I have purchased a new phone and downloaded my info into my new phone. Now my old phone is still getting imessages sent to my new phone. I have changed my Apple ID PW and removed the old phone number from my account, but is there any way to verify?

Your old boss needs to delete your Apple ID from the messages app on the phone.
Settings > messages.
