How to change iTunes audio output

Hello all, I am trying to find a way to change iTunes audio output or find a program to do so. I'm trying to stream iTunes into Ventrilo but still be able to keep everything else on my headset. I have tried VAC but thats still requiring me to set that as default. Any help??
