I'm not really sure there is a way to tell, it certainly doesn't seem to be something you can set within the iPad so I'd assume that if a 5Ghz frequency is available it would use that, otherwise it would default to using a 2.4Ghz frequency instead. I'd also assume from having a 5Ghz router myself that there would be some sort of light on your router which will flash on/off when data is recieved so if iPad is your only 5Ghz device and it's sending/receiving data then this light should flash on your router.

Go into your router configuration and give the 2.4 Ghz a different SSID than the 5 Ghz. When your iPad connects you can tell from the name which frequency is being used.
