iCloud, restoring info to iPhone5?

I lost everything from my iPhone (also lost my backups), I managed to retrieve everything using a piece of software I bought so thats all sitting on my Macbook atm. I have since had a replacement iPhone from Apple.

If I log into iCloud online I can open things like my contacts, can I add all my photos/videos and other stuff through the iCloud? I dont have a 'Photos' option on my iCloud like I do for contacts.


If I have to plug my iPhone into my Macbook to put my stuff back on, where do I put it? is everything fairly obvious? photos in the photos folder and so on. . . .?? (thats just being lazy, I havent even looked yet!)


I'm also having trouble understanding iCloud, I added my contacts back onto the phone via iCloud (open contacts, Import Vcard) , that means that they are not actually stored on the phone memory itself? but on 'the cloud' so if I ever loose connection to the cloud I will not be able to access my contacts? Or do they download off the cloud onto my phone so that they are not technically on my phone memory too???


same as my photo stream, I lost everything except a random selection of photos taken over the last month or so. These photos are in my photostream but not in my camera roll? How is that possible?


I have always set my iCloud to backup photos but this is just strange! I've read all the Apple help on this but its no help. (I actually sent it around at work to educate people on the importance of iCloud backups)
