Starting today I can no delete emails. I slide it to the left to bring up the deletion option and it just instantly snaps back to the right as if I never slide it. The edit button in the top right cornered changes from "edit" to "done" and starts flashing when this happens.

Force closed the mail app and then open it again, see if that corrects it. If not, then do a reset. Hold the sleep/wake and home buttons together until you see the Apple logo and then release. The phone will reboot. See if that corrects it. The reset will not affect your data in any way.
I tried all of this before posting. Tried again after posting and still didn't work.
What happens if you just hit the edit button. You should be able to select the mail and then tap the trash can. Does it work that way?

Anyway. Using edit to delete does work, but that doesn't solve the issue of the other way not working.
I realize it doesn't correct the other issue, I just wanted to make sure that email would delete first. If the force close and the reset does not work, the next step in user troubleshooting is restore from a backup. If that does not correct things, then the last step is restore as a new device, not from a backup.
Before you try the restore, I suggest going into Settings>Mail, Contacts, Calendars, and delete the mail account. Power the phone off/on, then add the email account back. If this does not do it, then continue with the restore.
Restoring is the last thing I want to do, and there is multiple email accounts all having the same issue.
I believe it to be a software bug, and with apple releasing 7.0.3 later this week I will wait to see if that fixes it.
I will also contact Apple Support and see if they have heard of/report said issue.
If it is a software bug, it is not affecting my phone. If it is affecting multiple accounts on your phone, then it leads me to believe it is something with your iOS, but not necessarily a bug. The iOS 7.0.3 update is to address iMessage issues, not mail. Whether you want to restore or not may not be an option for you, give the symptoms that you identified. Your decision to make, good luck.

Which is the same as your iOS and the iOS is very much software.
I have tested other phones and they didn't have the issue, but none of them were an iPhone 5S.
Software updates contain more than just one fix, they even tend to have unlisted fixes.

I just really don't want to restore. It was a ***** to do it when I went from iPhone 4 to iPhone 5S... Seems the lightning cable doesn't much like USB 2.0 or USB 3.0 and would just drop the restore from backup half way through. Took like 12 tries before it worked.

Complete restore and then restore from back up still didn't work...
On top of that if didn't restore any of my apps. Claiming they were "not installed because they could not be found"... What they **** was the back up for then? Isn't the back up supposed to back up your apps? How could they not be found?
I do not understand how a complete restore did not correct your email issue. You say you restored from backup. Did you do a restore as a new device? After that, add the email accounts to see if they work? If they do, you can restore from the last backup and see if they will work again. The only alternative if they are not working after that is to make an appointment at the Genius Bar to have the hardware checked. I cannot think of any further alternatives.

Does anyone other than you use this site? No offense, but you haven't been helpful and you have actually created a lot of issues as now I have to contact many companies as my security credentials have been reset because the phone refuses to re-sync apps...
