It's strange...movies look great, but the desktop UI itself looks fairly grainy. I've messed with the settings but there isn't really much there to change. Any suggestions?

Then what cable connection are you using out to that monitor, HDMI, HDMI to DVI, MiniDisplay Port to DVI or MiniDisplay Port to Display Port?
The issue you are having is HDMI to HDMI is not sending the correct Color Space signal to the Dell U2410.
