I have just moved to USA from Australia and one mobile carrier has told me my iPhone 4S cannot accept a USA SIM card? Is this correct

Depends... Is yours an Unlocked Device or Locked to an Australian Carrier...?
If locked to a Carrier... you will need to Contact that Carrier and ask if they Offer Unlocking and if you Qualify.
What mobile carrier did you contact? Is your phone unlocked? If so, then it should accept a US SIM card.

If your phone is carrier locked, it will not work with any SIM card other that one from the carrier it's locked to.
According to this list (http://support.apple.com/kb/HT1937), all of the Australian carriers offer unlocking. Contact your (former) carrier and find out if you qualify to have your phone unlocked so you can use it in the US. The only supported GSM carriers in the US are AT&T and T-Mobile, by the way.
Prepaid sim so not locked that I am aware of. So I should be ble to sign on to us crier Andretti a sim? Verizon were trying to tell me Australian phone not compatible?

Verizon is indeed not compatible since they use CDMA. All Aussie phone uses GSM. See KiltedTim post above.

The only supported carriers in the US are AT&T and T-Mobile. Verizon is a CDMA carrier (as are all of the other supported carriers in the US). You can't use any iPhone on a CDMA carrier unless it was specifically sold for use on that carrier.
