I have an 06 Scion xA with a Pioneer head unit which uses a 30 pin to proprietary cable that plugs into a socket near the emergency brake and allows control of the iPod/iPhone through goth the stereo and controls on the steering wheel. When I upgraded from an older nano to my 4s, I had to get a CableJive adapter that converted the built in plug from 12v to 5v. The official Apple Lightning to 30 pin adapter (atop the CableJive adapter) with my new 5s has allowed me to retain full functionality. I, also, have two AirPlay stereos with 30 pin docks. I haven't tried the adapter on the Panasonic yet. The Onkyo's dock is kind of shallow and I don't want to break either the 5s or the overpriced adapter if it can't balance correctly and tips over so I haven't botherd to test it. I kept my 4s to use as an iPod. I was freaked out like you are. If you can, ask a friend or family member or neighbor if they'll let you borrow their 5/s/c and have an adapter ready to go. What I did was buy the 5s, set it up just enough to get some music I'd bought from iTunes on it but didn't actually activate the phone so I would only have to pay restocking and not the activation charge if it didn't work, ordered two adapters and then tested it with my car. Honestly, if it hadn't worked, I would have returned it and made my provider restore my available upgrade and just stuck with my 4s which I did not update to iOS 7 for the foreseeable future. Destroying functionality with the 8 pin connector is completely idiotic; it can't even output 1080p as the 30 pin can. You might try googling for boards specific to your car(s) and head units (and home stereos with docks) but when I did so I found lots of conflicting reports from users and zero help from Scion or Pioneer directly. What has seemed fairly consistent is that Bose units are broken across the board, units that display video and integrated apps are broken and no 3rd party 8 to 30 pin adapters seem to output audio at all.
