Editing Information

When I download music and import it into my itunes, I cannot edit the information. Such as adjusting the volume or adjusting the album artist information for example. On the old itunes I was able to do this. What gives? Every time I attempt to accomplish one of these tasks I'll click on OK and it will make a ding sound and nothing has happened.
