Yes, I am using a paid app called "System Status" by Jiri Techet that shows dozens of system activities of all sorts like the things you want, for instance, System Uptime, and date and time the iPad was unlocked.

In the Page List you have a "System Log". The first entry (at the bottom) in that log should be the unlock time, at least this is how I interpret this.
I'll give it another test run.
You can also look in Memory and see in the Memory Graph when the iPad was unlocked.
A similar graph exists in Resources where the required information can be extracted from the Wi-Fi Usage Graph.
OK, I admit, it is not straight forward, but the information is there.
The information maybe in one of the log files.

That's strange, for the second app I get "Item Not Available".
May depend on what version of IOS you have.

Yes, I get it. I have the app myself but as far as I can see, you can only see that last time that you restarted the device - not every time that you lock the iPad and unlock it again. However, I could be missing where that feature is.
There is way more information in this app than many less tech savvy users would need or could even understand - and I admit that I am one of those very same users. I see nowhere that indicates when the last time the iPad was locked or unlocked - restarted yes, not unlocked. But like I said, I could me missing where that information is shown.
No. That is if you are talking about locking and unlocking with the device passcode, there is no log for that.

No. That data that is not logged on an iPad in any way that I have ever seen.
