How do I add and remove mp3s from my iPhone?
I've forgotten again how to add and remove mp3s from my iPhone. Can someone please remind me? I am an iTunes subscriber using a PC running Windows 7 and iTunes 11.1.

Open itunes, connect iphone, select what you want, sync
One way is to create a Playlist called "iPhone Sync" (for example). Then drag/drop your music from your Music Library into that Playlist. And Sync your Music by selecting ONLY the iPhone Sync Playlist. Going forward, you can add/delete music from that Playlist and re-sync each time.
Where are all these places, and how do I do it, step-by-step? I really have zero understanding at all. I know how to drag-and-drop mp3s onto my Sandisk mp3 player. It's basically one-step. I can't figure out how this is done in iTunes for an iPhone.
drag and drop the files/folder (with the songs) into itunes (you might have to drag it to 'library' in the top left (you'll see the songs added)
connect your device
select your device in itunes from the menu on the left hand side
under the songs, select (either via artist or album or whatever) by ticking the checkboxes
apply/sync
wait a while...
eject/remove your device

Read the manual: http://manuals.info.apple.com/MANUALS/1000/MA1565/en_US/iphone_user_guide.pdf
The whole point of any ios device is that you shouldn't have to use the manual - it means they have failed in the design
If you like reading manuals get a nokia or a samsung 😀
They can be deleted right from your phone by swiping left and then deleting. Added and deleted in iTunes. Hook the phone up to your computer, click on the phone, then you will see an option on this phone. Look at the music and right click to delete the ones you want. Add them by dragging from your iTunes library to your device in iTunes
More cryptic instrux, now an 800-page manual. This is hopeless. I guess iOS 7 no longer allows you to load your mp3s. You can't hear anything unless you pay the iTunes store each time you listen.

Make sure you have iTunes 11.1.1 installed on your computer.
Plug your iPhone into your computer.
Open iTunes. Create a new Playlist and name it whatever you want. I use iPhone Sync.
Go to your Music Library, click and drag the music you want into your new Playlist.
Click on your iPhone along the top right. Click on Music and select Sync Music and choose just the new Playlist.
Click on the Sync button on the bottom right of the iTunes screen.

BS, I have over 2000 mp3 songs on my 4S running IOS 7.

Again BS.
Where exactly can I find "Create a New Playlist" and "Music Library"?
I'm not on my Mac at the moment to tell you.
When you open iTunes. Maybe on Edit or you can Show Sidebar from Edit to see your Playlists at the bottom. Right click there to add a new one, I think. At the top of your Sidebar should be Music. That's your music library.
On a Mac with iTunes.
Plug in your iPhone to your computer.
Open iTunes.
Click View>Show Sidebar. Then File>New>Playlist. Create a new playlist.
Click on Music in the Sidebar then drag/drop the music you want into the new playlist you created.
After you get all your music in the play list you created click on the iPhone then Music and then sync your new play list to your iPhone.
got to your last instrux, now it's threatening to erase my entire old library and replace it. But I DON'T want to erase pictures and music.

This isn't rocket science. Please try and exercise some self-reliance.
