Was just wondering if there was a way to replace the text on the bookmarks bar with just an icon representing the page, as I would like to fit more bookmarks on and prefer the look overall 🙂

You can try searching for a Safari third party extension or plug-n that does this.
Most folks prefer the name of the bookmark opposed to the webpage icon considering most users have hundreds of bookmarks on the bar.
