Is there a way to disable the horrendous, useless, view iTunes goes into when you turn your iPhone sideways? It displays a wall of album artwork, in seemingly no order, or, no way to change whatever the order is. Is there any workaround for this? Or at least control what order it is displaying in?

No. For right now the best you can do is turn on rotation lock in the Control Center so it doesn't go into lanscape mode.
I would just like to re-iterate this and beg Apple to fix it. I mean, why?

I too share your frustrations with this useless landscape mode. (What were you thinking Apple?)
May I suggest LeechTunes. (their swipe gestures are what Apple should have been doing for years)

Itunes in landscape mode makes me upset! Why!!!!!!! Ugly and useless as ****! LeechTunes helps, but not for iTunes Radio.
By the way, the app is now called "Music"
So over the complete mess iTunes has become!!!! Completely non useable in landscape mode!!! The constant toggling to lock in portrait mode is getting very old. What was once the definitive music app is now becoming obsolete and Apple seems to be completely ignoring their music app. Their once heavy hitter will quickly get replaced. Even by us dedicated users who swore by iTunes for years. Y

Make sure to tell Apple you are referring to the Music app, not iTunes.
