Accented characters & diacritical marks are special characters that are not part of the standard font sets. To access them you need to use the Mac's built-in Character Viewer. First, turn it on in System Preferences > Language & Text > Input Sources. Select Keyboard & Character Viewer. This will place the character viewer icon in the top menu strip of your screen.

To use the character viewer, place your cursor at the location in your Word document where you want to insert the accented character. Then click the character viewer icon in the top menu of your screen. Select Show Character Viewer. In the left column select Accented Latin. In the right hand window find and select the character you want to insert into your Word document. Select it. Then click Insert.

Examples: ä ā ē ō ŏ ü ũ ĥ Œ ç ş

You can type ō from the keyboard by going to system preferences/language & text/input sources and checking the box for US Extended and then selecting US Extended from the "flag" menu at the top right of the screen.

The shortcut is option/alt + a, then the base letter.
