Just to clear things up:
I'm looking for a way to sync my iPhone with my MBP locally on Mavericks. That means either via WiFi with both devices in the same LAN or USB cable, depending on where I am and how much there is to sync (USB is quite a bit faster).
It also means that there must be NO other systems outside my LAN (That might mean a personal WiFi network I have set up temporarily with a portable AP) involved in the sync process, the data sync'ed MUST NOT be uploaded to systems I don't control.
Using an iMAP-server to sync notes (finally got that to work) already means that I cannot have some information in a note since the iMAP server is exposed to the big network by design and therefore is a target. It's only a matter of when, not if. Local sync of notes was more secure in that respect.

You must purchase and install OS X Mavericks server. You must then set up and Cal DAV and Card DAV services on the server and sync with those.
How to do that is out of scope for this forum. Try asking for help in the OS X forums.
The native functionality you want was removed from OS X Mavericks. You can't get it back without downgrading to an earlier version of OS X.
Any discussions as to why this may have been done, or the security implications of doing this are outside the scope of these forums and prohibited by the Terms of Service.

Sure, iCloud gives some very smart benefits and I've been getting amongst it... to a degree.
Notes - no problem although I shy away from any confidential scribblings.
Reminders - no problem at all (you'd have to be a pretty sad hacker to find my chores interesting!)
Calendar - a little worrying to say the least and I was a cautious late-adopter.
But now email account information and all of my contacts' names, nicknames, numbers, emails, home and work addresses, and birth-dates as well? Well that sounds like a massive security car-crash just waiting to happen.
One can't help being a tad cynical about the rationale behind this move. The fact that the choice has been removed is leading my thoughts down a bit of a dark alley and I'm actually quite sad that that's the case.
It's a step too far for me and I'm kicking myself for tumbling headlong into the lush green grass of these latest updates and upgrades.
Is it really too much for a die-hard Apple fan to ask that confidential information continues to be synced directly from one Apple product to another within the latest and shiniest Apple software if one prefers it that way?

I need to synchronize locally and I'm going to change everything and leave "Apple".

Since the upgrade to Mavericks and iTunes 11.1.2, I'm still able to locally sync my iPhone with my Macbook Pro's music/photos/movies/etc. via wifi and USB cable, but not my contacts or my calendars (I use the Mac apps Contacts and Calendar for both of these), which seemed kind of...illogical? There was no need to take away the Info tab feature in iTunes under Devices, because there is no need to back up different portions of my info across two different mediums (i.e. iCloud and my Mac.) I understand that iCloud is useful for some people, but it's just not a feature I would like to use (especially since the first time I tried it out, it proceeded to delete all of the contacts from my phone.) What's strange is that no one at Apple Support knew very much about Mavericks' new features, and couldn't tell me why any of my issues were happening. I'm hoping it's just a bug that the engineers and developers will fix. I just want my Info tab back, and I want to be able to sync all of my information from one, localized source that I trust: my Mac.
