In my area, there is an agressive service provider (Shaw). How can I block them them from ever showing in my wifi list?
(here is the editorial part: they ask to sign in as 'guest' but there is no such service any time I tried).

If it asks to sign in as "guest" you probably have to open up your browser and try to load a page first. I don't know about blocking a wifi option from showing up.
kb4200: I do appreciate the reply, but no offence intended, 'probably' and 'i don't know' are not really helpful.
In Settings>Wi-Fi, do you have Ask to Join Networks turned on? If so, then when you are in range of the network, it will prompt you to join if it is one you have joined before. See the User Guide here http://manuals.info.apple.com/MANUALS/1000/MA1565/en_US/iphone_user_guide.pdf about forgetting a network. If you get close to connecting the network, then go into Settings>Wifi, and to the right of the network is a blue "i". Tap on that and select Forget This Network on the next screen. It should no longer prompt you when you are in range of that network.
There is no way to "block" them or keep them off the list. If they are braodcasting the SSID (Name) it will show up. If your device is trying to auto connect to it, you can stop that. The next time you encounter it:
Settings app > WiFi > [Network in question, assuming it is "connected"] > ℹ > Forget this network
