I submitted site to be published in error, can I stop publishing or edit site page once published

I did not mean to request my site to be published, I did not complete designing the Provider Page. I would like to complete this prior to publishing. I also only want to publish one of 3 courses listed in site administration. All 3 were sent for publishing. I went to preview the site in iTunes and that seemed to start the publishing process. I didn't mean to do this. Once it was sent to publish, I can not hide the 2 courses I do not want public yet. How do I fix all these things?
