"Use A3 size document, landscape, and two columns."

Which gives you a view of two columns of text, with huge margins to left and right, and a skinny gutter between:

which isn't quite the same as a view of facing pages, where the 'gutter' represents the sum of the 'inside' margins of the facing pages, each of which is to be visually the same as the outside margin on the same page when the two are seen as facing pages in a book.

Simple answer workaround; Use A3 size document, landscape, and two columns.

You can now open saved pdf's as two page viewable.

How to form landscape; Menu bar > View > Inspector > Document Set up > Document/Section: (Select) Document > Page Orientation: (Select) Landscape shaped box.

or

Shift-Command-P (Page setup...) > (Page Attributes) Orientation: Select landscape, instead of portrait

How to set A3; Shift-Command-P (Page setup...) > (Page Attributes) Paper Size: (Drop down menu) Manage Custom Sizes: + > (Select) Untitled (You may have to scroll), and name as A3 (return) > Paper Size: 297mm (Width), 420.2mm (Height). > OK > OK.

Because I want to work in two page view, and I want to view the PDF in two page view.

How to save as template; Menu bar > File > Save as Template… > Save… > (Type a name) > Where: (Choose somewhere you like for easy access) > Save (Return). It’s now a template, so when you open it, choose, “New Document”.

Change back to A4 if you need.

"How to set, “Gutter” space between columns;

Menu bar > View > Inspector > Format > Layout > Columns > Click dropdown triangle to display/hide column data > Double click a gutter value to set the space between columns. A gutter space value double that of the margin will give you a document equal to two portrait A4 pages."

Thanks!

I did a brief search for that before posting the message above, but obviously it was what one of my vice-principal's called a "boy look" 😊

This is pretty bothersome, and I've been hoping an answer from an expert would come in.

As a cheap work around, I've selected View-> Show Page Thumbnails, and stretche the right-side border of that so I can scroll to get the previous and next page side by side.

But it shouldn't have to be that way. Especially with the full-screen capabilities, we should be able to view the document in "spreads." There's no reason this feature should be missing in an upgrade.
