I have just downloaded the software Extra Finder that petermac87 suggested.
It works! :-) I now have all my highlighted folders and images again.

Apple should simply incorporate both a Label and Tag system that way a user can assign an item a general color and if a user wanted to apply a hardly discernible color tag, they can do so.
