If I delete iWork 5 from my mac, will it still be available from the app store later for download and show I have purchased it? Will auto update try to download it again?

You will be able to download it from the purchases tab in the Mac App Store. Just login with your Apple ID and go to the purchases Tab and you will find it there.
You don't have to go back. Just look in your applications folder. The older apps are still there in a separate folder.
yes, but there is no way to set the default to open in 4.3 unless the apps are gone it seems...even in the get info section
In that case, if you still want to use iWork 4.3, delete iWork 5 apps and open iWork 4.3 apps. After deleting iWork 5, iWork 4.3 will be set by default

You will be able to update to iWork 5 whenever you want, so don't worry about this. You may want to make a copy of the iWork 5 apps on an external drive

To delete the apps, simply go to the Applications folder and delete them. To move them to an external drive, simply go to the Applications folder, select the iWork apps with the Command key and press Command and C keys. Then, go to the external drive and press Command and V keys
Command C, V makes an alias only
The external drive must be formatted in "Mac OS Extended (Journaled)". You can check this in Disk Utility
I went ahead and deleted Pages 5.0 to go back to 4.3. I can update back anytime I want. The same way I did it before. Only problem, Pages 4.3 keeps crashing. Must be something do with the compatibility with the Mavericks OS.
i have been using pages 4.3, no problems with crashing on Mav. so far
That shouldn't be the case. I have been using Pages 4.3 during the whole Mavericks beta period and has zero issues with it. Try to delete the plist files associated with Pages under ~/Library/Preferences
