How can I adjust how Apple's built in spell checker works?

I have upgraded successfully to Mavericks with no problems. Yeah!

I have grown quite annoyed with the built in spell checker. While in chat, I often use the word ahh and the spellchecker automatically changes it to agh if you keep on typing. I have to purposely do several extra key strokes to write the word I want, assuming I catch the automatic substitution.

Can I change the way the spell checker works?

Is there some setting I can change to turn off this auto substitution?

Can I just turn it off somehow?

Thanks ahead of time for your suggestions.
