I know what you mean. I finally, and reluctantly, made the switch from Office to Pages '09. Found it really helped me make well-presented documents in a short amount of time -> then -> moved to Pages 5 and ... truly....what was Apple thinking? Are they aiming this at the bulk of the bell curve? I don't think my word processing needs are really that fringe:
+ can no longer setup the toolbar with the commands I really use reguarly.
+ can no longer layout my two-page reports with pages side by side.
+ can no longer copy and paste styles from a toolbar button.
+ still cannot change the lage layout for each section, a minor addition, would have prevented me having to produce multiple .pages files corresponding to each section in my document.
+ now we have a side bar for formatting, but hey, let's not go all the way, we still have pallettes for arranging objects, colour adjustments, and colors! The wonder of Mac used to be the prudent use of space, small controls, little palettes, maximum room for content. Now, Apple has taken back the 17" Macbook Pro and now is taking back the 15" Retina screen real estate with palettes unnecessarily large.
+ can no longer resize thumbnails in the open file dialog or the new file dialog.
+ can no longer go to the title bar and do those things with the file you used to do - you have to go to the File menu for that now.
Look, I understand the need to simplify. And Apple has built their brand on simplicity and elegance, but they have never traded off needed functionality. Maybe a little user surveying is not such a bad thing? They have finally started to trade off good things for simplicity and now simplicity *****. Gosh darn it! I switched over to Apple and now find myself stuffing around with software versions and the like, the way I used to on the PC platform. Something has definitely changed over there and the software is showing it.
My only choice is to use either Pages '09 or Microsoft-and-lame Office.

You should check out Lucidpress (www.lucidpress.com). They have built a great cloud-based layout tool that has facing pages option in the document panel on the right.
What has your tip to do with the OPs question, qmorgan?
It is an option for other people like myself that were looking for an online tool, but still want facing pages. It doesn't look like Apple has any plans to bring back these features. Granted, it is not as polished as Pages.
No it isn't a polished PAges. Many of us have been waiting nearly 5 years.😢
You can go back to the previous version of Pages (I think '09) and the facing pages feature is there.
Pages '06/'08/'09 all have facing pages. PAges 5.2 does not.
So effectively the "upgrade" has gone back at least 8 years. Almost 30 if you consider Pagemaker and all the early DTP applications.
In answer to qmorgan Lucidpress is extremely expensive for what it is. It locks* you into a fairly mediocre** online solution for anything up to US$480/year.
Indesign CC would be by far the better option at this price.
There is also Swift Publishing on the Mac and Serif Plus on Windows. Both much cheaper and Serif Plus is a seriously usable Pro solution.
