Here is a good place to start:

    http://www.apple.com/compare-wifi-models/

But in my opinion here are some benefits to either.

AirPort Express - as the name states is a "lightweight" router in terms of footprint and functionality.

Its meant as a wireless only device with one additional LAN port for a server or a hardwired computer.

this device is a great wireless network extender, airplay device (connect speakers to it from an office or remote location on your network), add a wired printer, etc

The great thing about these AirPort Expresses is they are dualband so you get simultaneous 2.4Ghz & 5Ghz connection speeds and can easily extend dual-band router.

while it can support a great deal of connections/users/devices, id use it mainly as an extender ot an AirPort Extreme

AirPort Extreme - you get multi-lan port options, options to connect a hub, printer &/or hard drives via USB.

These newer ones give you dualband 2.4Ghz and 5Ghz connection speeds plus suppor the latest 802.11AC which ahs ethernet like speed for wireless.

so it offers a hefty punch.

they are also recommended for larger networks, requiring tons of devices/users and multiple wireless anntennas to keep a larger more stable signal
