Default language of movies and TV shows?

How do you change the default language of movies and TV shows in iTunes 11.1.2?

This worked until last week. I don't know if it was the update to Mavericks or the new iTunes version. Suddenly all my shows start to play in German. Note that the system language is German but the default language for movies and TV shows should be English. I don't want to change the language every time I start a show.

iTunes 12.3.0.44 on OS X 10.10.5, still the same issue. It never was a problem until recently, since then I always have to check the language for multi track video for each and every episode when watching a TV show via a playlist.

Apple support document - changed 2015 - still mentions default language setting via Settings - Playback, but there's no option to change the default audio language there.

Anybody knows about this?
