The very best 2.5" HD is a Hitachi, and is likely the ONLY thing the "HD gurus" agree on.
Toshiba is really neck and neck, nearly so. All HD can and will fail given enough time and or mechanical fault.
There are only 4 HD mfg. on earth, WD, toshiba, HItachi, and Seagate (conventional HD).
I have a 2012 Pro like youself, took out the 500gig Toshiba and put in THAT HD, and installed same on others Pros. Very easy operation. Takes roughly 15mins.
I assume you know how to do a HD clone (super duper or carbon copy cloner which also clones the boot volume).
THIS is the very best HD money can buy to put in your macbook:
$85
HGST Travelstar 7K1000 2.5-Inch 1TB 7200 RPM SATA III

will it be any faster than the Toshiba? No, ....hair more reliable, not much, all HD are "fragile" and CAN and WILL fail given right conditions.
😊
All recent macbook are of course SATA III
