What do we do with the old iWork 09 Applications

Hang on to them until you are certain that the new applications will do everything that you need.

I just has issues with numbers and though that maybe keeping the 2 was a bad Idea!

Keep them until you are absolutely positive you won't want to use them again.
Seriously, though- there are a LOT of features stripped out, and you might not be awayre of them until you miss them.
