Yes you have choices. If you do not like the options you have, then you are SOL. Sorry. No one here can get it back, so try talking to Apple.

Where did you come by that number, I am curious. Is there any break down on how many people ELECTED to use Icloud versus default backup settings etc? Breakdown of what sections they are using? What is counted as Icloud, by that I mean Siri and dictation use Apple server is that considered Icloud? Breakdown between uses, in example I might use it to backup an Itouch but doesn;t mean I used it to sync etc.
Bottom line for me, when you are exporting your data for storage and archiving your personal information such as calendar and contacts it should be your option as to where and how it is handled, not the company that makes your equipment.

Nothing is stopping you from doing that now. Store your data, export your data, archive your data with pretty flowers on your data. Do whatever you want with it. Just because Apple doesn't offer what you want doesn't mean you don't have a choice.

Of course not, and I do store my data offsite for BU protection. The syncing via offsite is the problem! Since the data I sync is not all that important to be concerned about compromise I am currently utilizing the sync through Icloud. My initial concern was as much Icloud working as privacy. Previous exploration with ME the original Icloud, and then the the start of ICloud did not demonstrate reliability in terms of actual operation. No matter how not sensitive my data may be in this area I own multiple Apple products and one of the reasons is the compatibilty between units for such areas as cross machine updating. Previously this could readily be done via hard wire between units now required to be done via outside servers, that is a game changing decision.
In light of all the data breaches occuring in today's tech world any such action should concern owners of equipment.
And remember Apple DID offer what I wanted, cross unit syncing in house, then they decided after I have expended thousands of dollars on their products, to change their offering!
I note you say I can STORE, EXPORT, and ARCHIVE my data, apparently with flowers, but made no mention of SYNCHING my data and rose garden....

I already mentioned that several posts ago. You can also use Mountain Lion or Windows. Lots of choices.

Going back to Mountain Lion is not a simple option nor a satisfactory fix. I do not even allow the word Microsoft to appear on my Mac's, I am making an exception here Twenty plus years of MSFT I would rather give up computing than return. I drive a Ford Fusion SL which contains the placard Powered By Microsoft on the center console. I shudder everytime I enter the vehicel
No sense you and I going round and round on this issue, I feel we are missing each others points.

I am trying the following solution. Perhaps it will work for you and for others.
I am slowly migrating away from Address Book altogether, over to a secure alternative, STRIP, by Zetetic.
STRIP is a password manager and "data vault." The data-vault part allows you to define any kind of records you like, with any kind of fields that you like. It is also smart enough to recognize phone numbers, URLs, and email addresses so that they may cause the iphone to dial a number or generate an email directly. (There are some configuration hassles to make this work, but it does work.) Advantages are:
- Data at rest is encrypted, and apparently pretty well. You can search for validation of that claim.
- Can sync between iOS and OSX using local WiFi (no cloud)
- Can also sync through dropbox or google drive (undesirable based on the original poster's needs), BUT, the data that sits on dropbox or google is encrypted. The cloud provider never gets the data in clear form.
- Can import and export data as .csv files
- No need to set up and maintain a server (or be subject to revisions in server software)
My process has been:
1. gradually export different categories of my Address Book to .csv files (see App Store for a solution)
2. clean up the .csv columns so that they will match up with the field names I want for STRIP (e.g. for STRIP to recognize an email address, the column name MUST be 'email', etc. Search for STRIP's import guide for more info, also STRIP's FAQ on how to work with other apps)
3. import the CSVs into STRIP on OSX
4. install STRIP on iphone
5. set up WiFi sync on OSX and iphone (see STRIP FAQ for how to do this). I ~believe~ the data will only pass through my LAN and not go anywhere else in the process, and that the sync flows are encrypted
6. Sync to iPhone
7. Test everything out.
At the moment I am running duplicate contact lists -- one in STRIP and the old one in Address Book. If the STRIP list remains stable and useable over a few months, then I will just export my Address Book contacts to .csv for the last time and delete the Address Book contacts locally and on icloud.
You can also replace iOS / OSX Notes syncing with STRIP in the same way. Not sure about an alternative to iCal though.
You obviously lose some of the benefits of Address Book like being able to automatically link contacts and the map. But to restore my privacy, I am willing to make that tradeoff.
Also, I happen to have found a solution via STRIP. There may be other similar software products that would allow the same end result.
Are there any issues / flaws (beyond what I have noted) that anyone sees in this sort of workflow?

for convenience here's a form message
Maverick does not permit syncing contacts with usb cable and permits syncing only through iCloud, which I and many other apple customers believe creates an unnacceptable security risk.. PLEASE allow direct usb syncing as was the case with Mountain Lion and Lion.

My concern is finding a way to link my iCal calendar from the desktop computer running Maverick with my iPhone iCal and not expose my computer in iCloud..My main.concerns are above all else Security SECURITY
I have given up on Apple doing a fix. iCloud is a money maker. Have decided to go back to Mountain Lion, we will see what problems that creates. Really sad about this.
