In Pages, I want to type something in a font "Gujarati Sangam". After selecting the same, when I type it is all regular English font. In the preview panel, it shows the English alphabet. Any other way?

I'm not sure which language this is used for. (Apologies for that.) But allow me to ask if you have this language activated as an input method.
In System Preferences: KeyBoard: Input Sources, make sure the language you are wanting to use is selected. Check Show Input Method in Menu Bar to see what you are using. Use the Shortcuts tab to turn on the shortcut to change input.
Menu > Apple > System Preferences > Language & Region > Preferred Language > + > Gujarati > Add
Select whether it is the Preferred language for your Mac (changes your menus as well) > Select input source Gujarati or Gujarati - QWERTY
You may have to restart Pages.

You can't switch languages by just changing the font in any modern computer. You have to instead switch the keyboard layout. Once you do that the font takes care of itself.
In Pages, I can see the 'Gujarati Sangam' fonts in Fonts panel, but when I type, they are just English!
