Becaue that was what Apple and the copyright holders settled on. The iPhones and iPad don't count as computers.

As far as I know, the iPhones and iPad do not count towards the total number of authorisations.

I don't believe they do.
What is more likely is that you have replaced an old computer, or one of your computers has been re-built (fixed by changing the hard drive or by re-installing the operating system) and this would count as a new computer.
The solution is go into your iTunes account and de-authorise all your computers. Then re-authorise just the three computers you do still have.

No they don't. Authorization Only applies to computers.
