I have unticked the sync music box on iTunes on my iphone tab and then when I apply to sync my iphone to take off the music on my iphone after the sync there is still a whole list of songs & albums and artists on my iphone under music how do I completely remove the music off my iphone?

What you may be seeing is iTunes in the Cloud purchases. If they have the cloud symbols to download, then they are not on your iPhone and just there to be streamed. You can go to Settings > Music and then toggle off Show All Music. Also check your usage on your iPhone by going to Settings > General > Usage to see if there is any Music taking up space on your iPhone.
Download purchased music to your iPhone.
